Fried apples wrapped in a thin dough
Large, firm and sour apples are ideal for this dessert. The "šlafrok" (literally meaning bathrobe) they are wrapped in is made of rarely dough and gives a special crunchiness to this well-known dessert.
Ingredients for 12 pieces
3-4 large firm apples
30 ml of lemon juice
For the rare dough:
3 egg whites
3 egg yolks
50 g granulated sugar
25 ml sunflower oil
200 ml of dry white wine
240 g white smooth flour
2 pinches of salt
½ grated zest of lemon
For sprinkling:
40 g granulated sugar
1 teaspoon cinnamon powder
Also:
100 g plain flour for breading
300 ml oil for frying
12 balls of vanilla ice cream
Liquid chocolate for topping
Preparation:
Core, peel and slice the apples into 1 cm thick rings. Move them to a suitable bowl, sprinkle with a little sugar, add lemon juice and set aside. Add sugar to the bowl containing the egg whites and beat them until firm. Add sugar, a pinch of salt and lemon zest to a separate bowl containing yolks and mix the ingredients using a hand mixer. Then add lemon juice and white wine and continue mixing. Next, gradually add flour and mix with a spatula. When you get an even mixture, add beaten egg whites and stir them in. Dry the sliced apple rings with paper towels, dip them in flour and then in the mixture you made. Deep fry in oil on both sides until golden-brown. Mix sugar and powdered cinnamon in a suitable bowl, roll the fried apple rings in the mixture. Set them on plates, garnish with a scoop of vanilla ice cream and liquid chocolate. Serve hot.
