Baked pancakes with fresh cheese
Pancakes truly are great – we almost always have the necessary ingredients ready at home and kids absolutely love them.
They are an excellent meal to quickly prepare for surprise guests: "Let's make some pancakes!" Baked pancakes with cheese require a bit more time to make, as well as the use of an oven, which gives an additional note of seriousness that cannot be accomplished by just using a regular pan, and which will make your dear guests remember this old Zagreb recipe for a long time. It is up to you whether you will share the secret of the preparation with them.
Ingredients for 6-8 persons:
For pancakes:
2 eggs
250 g white smooth flour
200 ml of milk
100 ml of mineral water
½ teaspoon granulated sugar
1 pinch of salt
For stuffing:
4 eggs
120g granulated sugar
10 g vanilla sugar
400 g of fresh cheese
180 g sour cream
50g raisins
30 ml rum
40 g butter
grated zest of one lemon
For topping:
150 g sour cream
1 tablespoon granulated sugar
Also:
100 ml oil for frying pancakes
Preparation:
Pour milk in a suitable bowl, add two eggs, salt and sugar. Gradually add flour while continuously whisking, pour in sparkling water and mix into an even mixture. Heat a spoon of oil on a pan over a flame and pour in enough of the pancake mixture to cover the bottom of the pan. Cook on both sides until golden-yellow. Repeat the process to make all of the pancakes. Place fresh cheese in a separate bowl and add sugar, raisins, butter, four eggs, zest half a lemon and mix the ingredients well. Stuff the pancakes with the cheese mixture and arrange them on the bottom of a buttered heat resistant dish. Coat them with a mixture of sour cream and sugar and bake for 25 minutes in an oven preheated to 195°C. Set the baked pancakes on plates, sprinkle with powdered sugar and serve warm.
